The three-digit number on a USDA-graded carton is the Julian pack date – the day of the year the eggs were washed, graded, and packed.

Quick Egg Facts
Why are some eggs white and some brown?
Shell color comes from the breed and genetics of the hen – earlobe color often correlates with shell color. It doesn’t change nutrition or quality.
Why are eggs refrigerated?
Commercial shell eggs in the U.S. are washed, which removes the egg’s natural outer coating. Refrigeration helps maintain safety and quality after washing.
What do Hudson’s hens eat?
We make feed at our own Elbridge mill, with different formulations for each stage of a hen’s life – made fresh daily from carefully selected ingredients.
